Farmers Fromage Scalloped Potatoes

This humble scalloped potato gratin showcases all local Central New York ingredients and provides familiar comfort on a cold winter day. The key ingredient in the rich white sauce is Wake Robin Farm’s Farmers Fromage, a soft sweet cheese that is creamy in texture with a hint of tangy yogurt and sour cream.

Ingredients

  • 8oz farmers fromage (Wake Robin Farm)
  • 2oz plain yogurt (Wake Robin Farm)
  • 1 egg
  • 2oz sharp cheese (Opus) (Wake Robin Farm)
  • 1 shallot, small, chopped
  • 2 tablespoons honey (Linck Apiaries, Inc)
  • .5 cup whole milk (include cream) (Wake Robin Farm)
  • 1 Medium sweet potato
  • 4 - 5 Medium white potatoes

Note

Serves 4 as a main dish, or 6+ as a side.

Directions

Step 1
Preheat oven to 350 degrees and shred the cheese.
Step 2
Remove from the oven and spread the remaining shredded sharp cheese evenly over the top; return to oven until melted and just browning, about 3 minutes.
